Turmeric Cauliflower Over Green Tahini

Ingredients

  • 1 head of cauliflower, divided into florets

  • 3 tablespoons olive oil

  • 1 tablespoon turmeric powder

  • 1 teaspoon sweet paprika

  • 1/2 teaspoon chili flakes

  • Salt to taste

Tahini Sauce:

  • 1/2 cup tahini

  • 1/2 cup water

  • 1/2 bunch fresh parsley

  • 1 lemon, juiced

  • Salt to taste

Topping:

  • Fresh parsley, chopped

  • Olive oil

Directions

  1. Preheat oven to 375°F (190°C).

  2. Line a baking sheet with parchment paper.

  3. Place cauliflower florets on the baking sheet. Drizzle with olive oil and sprinkle with turmeric, sweet paprika, chili flakes, and salt. Mix with hands to coat evenly.

  4. Bake for about 30 minutes or until golden brown and tender.

  5. Meanwhile, prepare the tahini sauce: Combine all tahini ingredients in a food processor and blend until smooth.

Assembly:

  1. Spread the green tahini sauce on the bottom of a wide plate.

  2. Arrange the roasted cauliflower on top of the sauce.

  3. Drizzle with olive oil and garnish with chopped parsley.
