Ingredients

8 cups flour
2 tablespoons dry yeast
3 teaspoons salt
4 1/2 cups water
1/2 cup olive oil
4 tablespoons pure maple syrup
Additional flour for dusting
Directions
In a large mixing bowl, whisk together flour, yeast, and salt. Add water, olive oil, and pure maple syrup. Mix thoroughly until combined. Cover the bowl with plastic wrap and a clean kitchen towel. Allow the dough to proof for about one hour, until it doubles in size.
Preheat the oven to 482°F (250°C). Line a baking sheet with parchment paper and dust it lightly with flour using a small strainer.
Gently press the dough down to release air bubbles. Using a ladle as a measuring tool, scoop evenly sized portions of dough for each pita bread. Place them directly onto the parchment paper. The dough will be sticky—shape each portion into a round with your fingers.
Ensure there is enough space between each pita bread on the baking sheet as they will expand. Dust the tops of the pita breads with flour.
Bake in the preheated oven for about 15 minutes, or until the pita breads are puffed and golden brown.
Allow the pita breads to cool completely before serving.
