Lemon-Hint Hamantaschen

Every year I develop new Hamantaschen recipes that are better than last years’ … and I love it! This time, I created a recipe that I honestly think it is the best one yet.

Creating a GF version might be challenging at times, but It is so worth it! The lemony hint makes all the difference in this recipe and they turned out crunchy and decadent to perfection.

A few tips:

  • The dough becomes sticky at first but will be perfect once it rests in the fridge overnight or at least 8 hours (Don’t skip this part).

  • When the cookies come out of the oven, they should be golden brown in the edges, but they will be soft to touch. No worries, once they cool down they will harden and become crunchy.

  • If you do not have GF oat flour but have GF oats at home, you can prepare your own flour in a Vitamix. It is cheaper than buying the flour and it works perfectly fine.

Ingredients: yield: 17 cookies

1 1/2 cups GF oat flour

1 cup almond flour

1 tsp baking powder 

1/4 cup olive oil 

1/4 cup pure maple syrup

Zest of 1 lemon 

1 tablespoon lemon juice 

Filling:

Strawberry jam 

Directions:

Heat oven to 350 F.

To a mixing bowl add the dry Ingredients and mix. Next, add the wet ingredients to the dry ingredients and mix.

Place the dough in a plastic wrap in the fridge for overnight or for at least 8 hours, to set.

Take a parchment paper and lay on your working surface. Place the dough on top and cover with another piece of parchment paper, same size as the one underneath. (It should be approximately the size of your baking sheet) Take a rolling pin and roll the dough to about 1/5 of an inch.

Take a round cookie cutter and cut circles. Take a spoonful of the filling and put it in the center of each circle.

Then pinch together one side, and then fold in the other 2 corners to create a triangle. You can close it on top all the way, or you can leave it open at the top- it is up to you.

Bake for about 10-15 minutes until golden brown in the edges.

Let the cookies cool down completely, then sprinkle some powdered sugar and serve.
