Ingredients
1 eggplant, sliced into sticks (check out the video below)
1/2 cup chickpeas flour
1/4 cup zaatar spice mix
1/2 teaspoon salt
1 cup water
3 tablespoons olive oil, for drizzling
Directions
Preheat oven to Roast setting.
Line a baking pan with parchment paper.
In a mixing bowl, combine chickpea flour, zaatar spice mix, salt, and water. Whisk together to form a batter.
Dip each eggplant stick into the batter, ensuring they are thoroughly coated, then place them on the prepared baking sheet in a single layer.
Drizzle olive oil over the eggplant fries.
Roast in the oven for about 10 minutes on each side or until golden brown.
Dipping Sauce
Ingredients
1 cup cashew yogurt (or your preferred alternative yogurt)
2 tablespoons chopped parsley
Juice of half a lemon
Pinch of salt, to taste
1 tablespoon olive oil, for drizzling before serving
Directions
Mix together cashew yogurt, chopped parsley, lemon juice, and a pinch of salt.
Drizzle olive oil over the sauce before serving.
