Mediterranean Olive Bites

Ingredients

1 block of tofu 16 oz / 453 g

1 tablespoon dijon mustard

1 1/2 tablespoon white miso

1 1/2 lemon, juiced

1 tablespoon pure maple syrup

1 tablespoon olive oil

1 1/2 teaspoon salt

1 cup all purpose flour

1 teaspoon baking powder

black kalamata olives, pitted (about 16)

avocado oil spray or olive oil spray

Directions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a food processor, combine tofu, dijon mustard, white miso, lemon juice, pure maple syrup, olive oil, and salt. Process until smooth.

In a mixing bowl, whisk together flour and baking powder until evenly distributed. Pour the tofu mixture into the flour and mix to create a sticky dough.

Take a small ice cream scoop and dip it in water. Scoop a ball from the dough and place it on the baking sheet. Repeat with the rest of the dough, wetting the ice cream scoop between each use.

Take a kalamata olive and push it into the center of each Olive Bite. Repeat with the remaining Olive Bites.

Spray the top of each Olive Bite with avocado oil or olive oil spray.

Bake in the preheated oven for about 25-30 minutes or until golden brown.

Allow the Olive Bites to slightly cool before serving.

Store leftovers in an airtight container in the fridge. For best results, reheat them in the oven before serving.
