Tahini Granola

Granola for me is the ultimate sweet treat. It’s crunchy, vegan, gluten-free, and not too sweet. So, it speaks to all of my likings. How is this tahini granola different from the typical granola recipes? Well, this one is crunchier, richer, and more nutritious. It is one of those recipes that are so easy to make at home, and personalize by adding your favorite spices. Some options include adding cardamom, vanilla, or even making it savory with cumin and salt, a cajun spice mix, zaatar spice mix, you name it—the sky is the limit.

You can prepare a batch for the whole week in no time.

Ingredients

3 cups gluten-free old-fashioned oats

1 cup raw nuts (I used: pecans, walnuts, and almonds) 

1/2 cup tahini

1/2 cup pure maple syrup

1/4 cup olive oil

1 teaspoon vanilla extract

Pinch of salt

1 teaspoon ground cinnamon

Directions

Heat oven to 375F

Prepare a baking sheet lined with parchment paper and set aside.

In a large mixing bowl, combine the oats and nuts.

In another bowl combine tahini, pure maple syrup, olive oil, vanilla extract, salt, and cinnamon, using a whisk.

Pour the wet ingredients into the dry ingredients and mix thoroughly to cover everything evenly.

Pour the mixture onto the baking sheet in one layer and bake in the oven for about 15-20 minutes until golden brown. Be careful not to burn the granola—check on it frequently.

When golden brown, remove from the oven and let it cool down completely. Break the granola with your hands and store in a glass jar on the counter. Enjoy as a snack, or on top of a smoothie, yogurt, or ice cream.
