Green Quinoa & Rice

One thing I always say to the people around me is “Eat your greens”. It is so important to incorporate greens into our diet for so many reasons. Greens are low in calories, an excellent source of fiber, folate, and vitamins such as C and K as well as minerals such as iron and calcium. In addition, leafy greens act as antioxidants in the body.

I love this recipe so much because it’s true comfort food and it hides in it a large amount of greens.

So, you basically eat something super healthy without even thinking about it too much.

Sometimes it’s hard to convince kids or even adults to eat their greens unless they don’t really see them.

The greens add an enormous amount of flavor here in addition to their health benefits.

Great to serve over simple green beans or any other steamed vegetable that you like.

Drizzle with tahini sauce and you are all set.

This dish is great for meal planning because it’s easy to store in the fridge for a few days.

Ingredients

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated/minced

4 spring onions, chopped

4 celery stalks, chopped

1 tablespoon cajun spice mix

5 cups fresh spinach

2 bunches fresh parsley, thinly chopped

1 bunch fresh dill, thinly chopped

1 bunch fresh cilantro, chopped

1 cup quinoa

1 cup basmati rice, washed

3 cups water

+Salt

+Pepper

Directions

Turn the stove heat to medium. Place a wide deep pan on the stove and add olive oil, garlic, and ginger. Sauté for a couple of minutes and then add onions, celery, and cajun spice mix. Sauté for a couple of minutes and add spinach. Let the spinach wilt and then add parsley, dill, and cilantro. Cook for a few minutes until the greens have shrunk. Next add quinoa, rice, water, salt & pepper. Bring the pot to a boil and then lower to simmer and cook until all the water has evaporated.

Serve over green beans and drizzle some tahini sauce on top.
