1 package of steamed beets, about 7 small ones, cubed

1/4 cup pepita seeds

Dressing

1 lemon, juiced

3 tablespoons olive oil

2 tablespoons pure maple syrup

+salt and pepper to taste

Directions

In a large mixing bowl, whisk together the lemon juice, olive oil, pure maple syrup, salt, and pepper to prepare the dressing.
