Ingredients

1/2 package firm tofu

1 tablespoon coconut oil

1 1/2 lemons, juiced

1 small clove of garlic

1 persian cucumber, thinly chopped

3 tablespoons dill, chopped

salt to taste

Topping

dill and olive oil

Directions

In a food processor, combine tofu, coconut oil, lemon juice, garlic, salt, and a small sprig of dill (reserve the majority for later) until smooth. Then, add the cucumber and the remaining chopped dill. Mix gently with a spoon until well combined. Transfer the mixture into a serving dish, sprinkle with additional dill, and drizzle with olive oil. Serve alongside vegetables and crackers.
