Fruit Smoothie Cake

This cake is one of those flavorful coffee cakes that, visually, looks so simple, but it's actually very complex and full of healthy ingredients! Basically, you are in charge of the flavors; whatever you like in your fruit smoothie will be used as the "wet ingredients" in your cake. I happen to use the "red goodness shake" (the last recipe I posted) and it contains beets, carrots, ginger, apple and more! All you need is a whisk and a mixing bowl and you are done!

 

Ingredients:

2 tablespoons coconut oil, melted

1 cup brown sugar or pure maple syrup

2 cups fruit smoothie

1 teaspoon vanilla extract

2 cups spelt flour or gluten-free flour blend

1 1/2 teaspoons baking soda

1 teaspoon cinnamon 

Oil spray

 

Directions:

Heat oven to 375F.

Take a loaf pan and spray with oil.

In a mixing bowl add coconut oil, sugar, fruit smoothie  and vanilla extract - mix to combine. In another mixing bowl add the dry ingredients: flour, baking soda, and cinnamon, mix.

Pour the dry ingredients into the wet ingredients gradually--in small batches--and whisk it until it has reached a smooth texture. Pour into the greased loaf pan and bake for about 40-50 minutes, or check that a toothpick inserted to the center of the cake comes out dry.
