Delicata Squash & Pomegranate Salad

Delicata Squash is a great fall vegetable. It is naturally sweet, decadent, and works amazing in Salads. I created this salad for a dinner party I was hosting and it was the hit of the party. Everybody loves to eat healthy, without compromising on flavor, and this salad is the perfect example. You can really enjoy a hearty yet healthy ingredients salad. Eating without guilt is my thing, lol. I always like to prepare all the ingredients of any salad that I make for hosting in advance and do the assembly right before my guests show up, that way it’s as fresh as possible.

Ingredients:

yield: 6 servings

1 romaine lettuce head, washed, dried, and chopped

1 bag of baby kale, about 2 cups full

1 delicata squash, cut in half lengthwise, seeded and sliced then roasted in the oven with olive oil, salt & pepper until tender and golden brown

1 pomegranate, seeds

1/4 cup pine nuts, raw or roasted

2 tablespoons vegan parmesan

1/4 cup tahini sauce

1 lemon, juiced

+ salt

+ pepper

Directions:

Take a wide plate and start by layering the romaine lettuce first, then the baby kale, next the delicata squash, pomegranate seeds, pine nuts, vegan parmesan. Next drizzle the tahini sauce, lemon juice, salt & pepper. serve immediately.
