AM Northwest KATU TV- Cooking Segment / Stuffed Eggplant

Today on am northwest I showed how I make my famous Stuffed Eggplants.

Eggplant in general is a veggie I grew up on and so do my husband. Both our mothers are from Eastern Europe and eggplant is a very common dish there. In every style of cooking possible.

This one is my own creation and is definitely one of our favorites. One dish meal is a wonderful way to host as well, since it can feed a crowd pretty easily.
