Chipotle Style Dressing
Tahini is a wonderful ingredient to use in dressings / sauces to create creaminess.
It is a great alternative to mayonnaise or oil. My kids love smokey flavor and this recipe combine creaminess and smokiness. Truly the perfect dressing for a mexican healthy bowl. (Check out the photo below to see how we used it)
Ingredients:
1 cup tahini
2 red bell peppers, roasted, peeled and cored (you can use a store bought jar)
2 tablespoons lemon juice
1 tablespoon smoked paprika
3 cloves garlic confit or 2 cloves fresh garlic cloves
salt
pepper
Directions:
Add all the ingredients into a food processor or into a bullet, process until completely smooth.
