Millet Bite Size Patties

Millet is a wonderful and super nutritious seed that is mild in flavor and has many health benefits such as:

High B-vitamin content, calcium, iron, potassium, magnesium, zinc, and essential fats that our body needs. These patties are so flavorful and beautiful to serve as an appetizer. I drizzled mine with spinach ranch dipping sauce but you can also serve it with a basic tahini sauce or your favorite dipping sauce.

 

Ingredients:

1 cup millet

2 1/2 cups water

+Salt 

2 flax eggs ( 2 tablespoons flaxseed meal and 6 tablespoons water, let soak for 10 minutes)

1 tomato, grated

1 red bell pepper, thinly chopped

4 spring onions, thinly sliced

4 fresh basil leaves, thinly chopped

1 tablespoon fresh ginger, grated

1 tablespoon hemp seeds

1 lemon, zest and juice

3 tablespoons olive oil

+Salt

+Pepper 

Olive oil spray 

 

Directions:

Heat oven to 375°F

In a pot add millet, water, and salt. Cook until all the water has evaporated. Let it cool down completely.

Take a mixing bowl and add all the rest of the ingredients including the cooked millet. Mix well.

Take a baking sheet and line with a parchment paper. Take a small ice cream scoop and create an evenly sized patties. Spray the top with olive oil and bake in the oven for about 20-25 minutes until golden brown. 

Serve warm with some spinach ranch dipping sauce on top.
