Pinto Bean Salad

The new hit in my house is this delicious bean salad. My daughter, my husband and I are addicted...

So good, so simple, and who would have thought that the combination of olives and beans could be so good? 

Adding the green onion helps the flavors marry, and ties the whole meal together.

I just love the simplicity of this recipe. I like to eat the bean salad on top of some kale and sliced tomatoes, giving me a balanced meal that is so satisfying. Give it a try and let me know your thoughts. By the way, you can use any beans you like. I tried it with Lima beans and it was delicious and creamy. The thing is that with Lima beans, they don't keep their shape as well as the pinto beans, so when serving for guests, the pinto beans looks more appealing. 

 

Ingredients:

3 cups pinto beans, (soaked and cooked in salty water)

2 green onions, chopped

14 Kalamata olives, pitted and sliced

2 tablespoons olive oil

Salt

Pepper

 

Directions:

Mix the beans, green onion and olives. Drizzle with olive oil, salt and pepper. Mix and serve.
