Tofu Omelette
Omelette is one of my favorite lunch options. I eat my oatmeal in the morning and then at lunch time, I like to eat something that is packed with protein and will keep me satisfied for the rest of the day, an omelette is a great choice. You can add a kale salad garnished with avocado, and you'll have an incredibly balanced meal. It is also a great way to lose weight, since you will be full and feel satisfied.
Working from home while trying to lose weight can be challenging because you always feel like eating something. Keep your meals balanced and full of nutrition, and you shouldn't have that feeling.
Tofu omelette seasoned with yellow curry is a unique dish with amazing flavors that compliment each other. It is challenging to work with the thick batter, but once you get the hang of it, you'll manage. Use a nonstick frying-pan so you won't consume any oil.
Ingredients:
organic sprouted tofu 15.5 oz / 439 g
1 tablespoon yellow curry paste
1/2 teaspoon turmeric
3 tablespoons nutritional yeast
2/3 cup flax milk or soy milk - unsweetened
1 1/2 tablespoons arrowroot
Salt
Pepper
Directions:
Add all the ingredients into the food processor and mix until very smooth.
Heat the stove on low heat, Take a non stick pan and add a cup of the batter, gently try to spread it with a spatula as much as possible- it is pretty thick. When the edges gets brown, then flip the omelette and cook for couple more minutes. Serve with avocado and kale salad.
