Bulgur Tabbouleh Salad

Tabbouleh salad is a classic Mediterranean dish. It is super refreshing, light, lemony, and healthy.

I love to make this salad all summer long for lunch and to drizzle it with Tahini sauce.

It is a great salad to prepare ahead of time, the longer it sits the better it gets! The dressing soaks into the bulgur and makes it so flavorful!

Ingredients:

2 cups of soaked bulgur - 

( 1 cup dry bulgur soaked in 1 cup of boiling water)

1 long carrot, thinly cubed

2 roma tomatoes, thinly cubed

1 yellow pepper, thinly cubed

1 red bell pepper, thinly cubed

2 green onions, thinly chopped 

1 cup fresh parsley, chopped

1 tablespoon hemp seeds.

Dressing:

1 lemon, zest and Juice

2 tablespoons olive oil

+Salt

+Pepper

 

Directions:

Mix all the salad ingredients in a bowl.

Mix all the dressing ingredients in another small bowl. Pour the dressing over the salad, mix and serve.

Serving suggestion:

Serve in a bowl or on a platter on top of romaine-lettuce.
