Almond Feta Cheese

Great alternative for feta cheese, just much healthier and tastes better:)

I made it the other day and my son absolutely loved it so much! If you expose your kids to good alternatives that are better for them, they will adapt quicker than you think.

Ridiculously easy to make = bonus :)

 

Ingredients

1 cup soaked slivered almonds (24 hours in the fridge with plenty of water)

1 clove of garlic

1 lemon, juiced

2 tablespoons olive oil

1/4 cup water

+Salt

+Pepper

 

Directions

Drain the almonds.

In a food processor, add all the ingredients and let it whip for about 10 minutes. From time to time stop and scrape the sides. When the texture gets creamy enough, it's ready.

Serve on a fresh baguette or with your favorite veggies. Sprinkle with some pepper and if you wish some more olive oil--healthy and delicious!
