Vegan "tshulent"
What a lovely cold day to eat vegan "tshulent"!
Beans are filled with antioxidants and the colored beans are even 2-3 times more than the white beans!
Beans are good for the heart and reducing the risk for cancer.
Here is a lovely recipe to use in your crock pot, super easy and super healthy!!!
Ingredients:
1 teaspoon olive oil
1 onion chopped
1 head of garlic peeled
1 cup green lentils, soaked overnight and drained
1 cup garbanzo beans, soaked overnight and drained
3 cups white beans, soaked overnight and drained
2 cups butter beans, soaked overnight and drained
1 1/2 cups pearl barley
3 yams peeled and cubed
1 tablespoon turmeric
1 tablespoon sweet paprika
1 tablespoon old bay seasoning
1 tablespoon honey
1 tablespoon no chicken paste
Salt
Pepper
8 cups of water
Directions:
In a crock pot start layering the dish:
First, olive oil, then onion, garlic, lentils, salt, pepper, beans, pearl barley, and yams.
In a mixing bowl add all the seasoning and some water, mix all up and pour over the beans. Add the rest of the water.
Cook on high for 3 hours, then lower to low for 8-10 hours.
