Dried peas and nuts patties in roasted red peppers / tomatoes sauce
Dried peas are so good for us!
Did you know that they are packed with fiber, they lower cholesterol, manage your blood sugar disorder,
Great for digestive system, and the heart.
They are also good source of protein, manganese, folate, vitamin B1,
Potassium and phosphorus.
And most of all they are super tasty !
I enjoy cooking with them!
Here is a wonderful recipe for a great alternative to meat balls in red sauce:
Ingredients:
Patties:
1 cup dried peas soaked in 1.5 cups water for 7-8 hours or more
1 cup fresh parsley
3/4 cup roasted mixed nuts
1 1/2 tablespoon flaxseed meal
1 clove garlic
1/2 cup panko bread crumbs
1 tablespoon olive oil
Salt
Pepper
For the Sauce:
1 clove of garlic
1 can tomato sauce 15 Oz/425 gr
1 can fire roasted red peppers 12oz
1/4 cup fresh cilantro
1/4 cup fresh Basil
Salt
Pepper
1 tablespoon agave
1 teaspoon hot paprika paste or hot sauce
2 cup water
Directions:
Patties:
In a food processor add the dried peas with the leftover water, parsley, olive oil, nuts, flaxseed, garlic panko, salt and pepper. Mix until blended.
Set aside for few minutes.
For the sauce:
In a food processor add all the ingredients and mix until completely smooth.
Pour the sauce into a cast iron wide deep skillet, and put on low heat.
Take an ice cream scooper, dip in water, and into the patties mixture, form patties evenly. Gently place patties in the sauce, put the lid on and cook for at least half an hour or more. Shake the skillet from time to time to ensure that the patties don't stick to the bottom of the pan.
Serve warm with soft polenta.
Polenta recipe:
6 cups water
1 teaspoon salt
1.5 cups thick cornmeal
In a sauce pan, bring water and salt to a boil, then add the corn meal and stir constantly until all the water have evaporated and the polenta is nice and creamy.
