Tempeh Taco

Ingredients
1 tablespoon olive oil
1 large onion, sliced into slices
1 red bell pepper or yellow pepper, sliced into slices
4 cloves of garlic, chopped
1 package of tempeh, cut into small cubes
1 1/2 tablespoons taco seasoning
+salt
+pepper
Directions
Heat a large nonstick pan over medium-high heat. Add olive oil, onions, salt and pepper. Sauté for a couple of minutes, then add the garlic. Sauté until the onions are softened and translucent, about 5 minutes.
Add a splash of water occasionally to prevent sticking and help steam the vegetables. Next, add in the tempeh, taco seasoning, and additional salt and pepper. Lower the heat and continue to sauté until the tempeh is heated through and browned in spots, 5-7 minutes.
Serve over brown rice. Garnish with chopped parsley and a drizzle of olive oil. Enjoy!
