Raw Broccoli Salad
So simple yet so delicious—especially if you like broccoli. This salad is one of our latest favorites in the house. Great as a snack too! You can always switch the goji berries with cranberries, however, I prefer this combination because goji berries are less sweet and considered a superfood.
Ingredients:
5 cups raw broccoli, chopped
1/3 cup goji berries
1/3 cup sunflower seeds
Dressing:
2 tablespoons olive oil
1 teaspoon dijon mustard
1 clove garlic, minced
1 tablespoon pure maple syrup
1 lemon, juiced
1/4 cup water
+salt
+pepper
Directions:
Mix all the salad ingredients in a bowl.
Mix all the dressing ingredients in another bowl using a whisk, or you can blend it in a mini blender.
Pour the dressing over the salad, mix and serve. You can keep leftovers to the next day, it will taste even better!
