Purple Cabbage Salad
Salad as a meal is my ultimate lunch choice. This salad is a great example for a hearty, refreshing, colorful, and delicious salad.
We eat with our eyes first, so preparing a dish that is beautiful, helps :-)
It is super affordable, loaded with protein, fiber, and low in calories - all the best components in one dish.
Ingredients
Yield: 6-8 servings
1/2 purple cabbage, chopped
1 cup pinto beans, cooked
1 cup corn, frozen and thawed
1 cup cherry tomatoes, sliced in half
5 spring onions, chopped
1 red pepper, chopped
1 tablespoon roasted sesame seeds
Handful sunflower sprouts or your favorite sprouts
Dressing
2 tablespoons olive oil
1 lemon, zest, and juice
1 orange, zest, and juice
1 teaspoon pure maple syrup
+salt
+pepper
Directions
Mix all the salad ingredients except the sprouts and the sesame seeds, in a bowl.
Mix all the dressing ingredients in a separate bowl.
pour the dressing over the salad and mix, garnish with the sprouts and the sesame seeds and serve.
