Mushroom Pearl Barley Soup
Mushroom Pearl Barley soup is one of the most comforting soups to exist! The texture, flavor and the combination of it all makes this soup a winner! So easy to prepare and one of the best soup recipes I have.

Ingredients:
1 large onion, chopped
2 tablespoons olive oil
4 cloves of garlic confit or 2 cloves of fresh garlic, minced
4-5 cups of mushrooms, thinly chopped
2 large carrots, sliced
1 parsnip, chopped
10 cups of water - (about)
bunch of fresh parsley, chopped
2 tablespoons of vegetable base
2 cups of cooked pearl barley (according to package instructions)
+salt
+pepper
Directions:
Take a large pot and add onion, olive oil, salt & pepper, sauté until translucent but not burnt. Next add garlic, mushrooms, carrots and parsnip, sauté for a few minutes, then add water and bring to to boil. Lower the heat to low and add parsley, vegetable base (to taste), cooked pearl barley and more salt and pepper if needed.
Cook the soup on low heat for about 20-30 minutes.
Serve with a crunchy toast.
