Crunchy Gluten-Free Waffles
These waffles are so crunchy and taste perfectly sweet but not overly sweet.
There are many waffle recipe out there but this one is definitely the best one of all (in my opinion, of course).
This one is gluten free which is a big plus for many of us.
The ingredients in this recipe are key to a successful waffle, as well as PATIENCE....Why patience? Because after much trial and error, I learned that if you want your waffles to be perfect, don't be tempted to "check" on them and open the waffle machine. Let it do the work and open only after 9-10 minutes. I bought myself a waffle machine from Target for $20 and it was one the best kitchen "investments" I've made....😊
It works great and the waffles come out nice and crunchy! Plus, the batter doesn't stick, which is amazing.
Last but not least are the toppings. Take your time and prepare a beautiful plate with berries, cut up fruits and good quality pure maple syrup, and you are pretty much set!

Ingredients (6 servings)
2 cups blanched almond flour
1 cup tapioca flour
2 teaspoons baking powder
2 tablespoons flaxseed meal
Pinch of salt
1 cup almond milk or any non-dairy milk
1/4 cup apple sauce
2 teaspoons apple cider vinegar
1/4 cup pure maple syrup
2 teaspoons vanilla extract
2 tablespoons olive oil
Directions
Heat the waffle machine on high.
Take a mixing bowl and add almond flour, tapioca flour, baking powder, and flaxseed meal, and salt, mix with a whisk.
Next, add the almond milk, apple sauce, apple cider vinegar, pure maple syrup, vanilla extract, and olive oil, mix well with a spatula or a whisk.
Take 2 large scoops of the batter and place in the center of the waffle machine. Close the waffle machine and don’t open it for 9-10 minutes. This is the secret to get the perfect crunchy waffle! Be patient…it’s worth it.
After 10 minutes remove from the waffle machine and place on a cooling rack. This will help keep the waffles crunchy.
Serve the waffles with blueberries, strawberries, fresh cut-up fruits, pure maple syrup, and your favorite toppings.
Pro tip: You can freeze these waffles and when you’re ready to eat, warm them up in the toaster. Just like frozen waffles, but gluten free, MUCH healthier, and you know exactly what ingredients went into them!
