Biscotti
The meaning of Biscotti in italian is a biscuit or a cookie. Twice-cooked, referred to oven baked goods that were baked twice to become very dry and will last a long time.
Biscotti is a long time favorite of mine. I love the crunch and the mild sweetness.
My spin on the classic recipe is adding the orange flavor. It turned out so incredibly delicious!
What I also love about this recipe is that it’s so versatile. You can add almonds, almond extract or any nuts of your liking. you can even add cacao powder to create Chocolate Biscottis.
You can add your favorites or leave it plain, it’s up to you. It will turn out amazing with or without:)
Ingredients
1/2 cup coconut oil, melted
1/2 cup pure maple syrup
1/2 cup applesauce
1 teaspoon vanilla extract
zest of 2 oranges
juice of 1/2 orange
2 1/4 cups gluten-free flour blend (I use 1 to 1 Bob’s Red Mill)
1/3 cup gluten-free oat flour
1 teaspoon baking powder
pinch of salt
Optional: you can add to the batter handful of roasted almonds, roasted hazelnuts or walnuts.
Directions
Heat oven to 375 F
Prepare a baking sheet with parchment paper , set aside.
In a mixing bowl add melted coconut oil (in the microwave for 50 seconds), pure maple syrup, applesauce, vanilla extract, orange zest, orange juice. Whisk it all together.
In another bowl add: gluten-free flour blend, gluten-free oat flour, baking powder and salt. Whisk well.
Add the dry ingredients into the wet ingredients, mix and form a dough.
Shape it into a log and place on the baking sheet.
Bake in the oven for 30 minutes.
Remove from the oven and let it cool down on a cooling rack until completely cold.
Slice with a sharp knife slices that are about 1/2 inch and place back on the baking sheet.
Bake in the oven for another 8 minutes on each side or until golden brown evenly.
Remove from the oven, place on a cooling rack and let it cool down completely.
Store in a glass jar on the counter.
