Fresh Cranberry Salad
This fresh cranberry salad is my holiday season hit while fresh cranberries are in season. It is light, refreshing, and a great side dish. I personally love it so much that I can eat it for breakfast, lunch or dinner:)
The salad gets even better the next day after the cranberries soaked all the dressing flavors.
Ingredients
4 cups fresh cranberries, 24 oz / 680 gr
1/3 cup raw walnuts, chopped
1 apple, thinly sliced
Dressing
1 orange, juiced and zest
1 lemon, juiced and zest
1 tablespoon olive oil
2 tablespoons pure maple syrup
+salt
+pepper
Garnish : mint leaves
Directions
In a food processor add cranberries and pulse just until roughly chopped. Pour the cranberries into a mixing bowl. Add walnuts and mix. Mix all the dressing ingredients in a separate bowl and pour over the salad. Place the sliced apple on top and serve.
