Fennel Citrusy Salad

Ingredients
2 fennels, thinly sliced with a mandoline
2 oranges, segments
2 tablespoons chopped roasted pecans
Dressing
leftover juice from the oranges
1 lemon, juice
1 tablespoon pure maple syrup
2 tablespoon olive oil
1 teaspoon sumac
salt and pepper to taste
Garnish
some more chopped pecans and sumac
fresh parsley, chopped
Directions
To a mixing bowl add all the dressing ingredients and whisk to combine.
Add the fennel and orange segments and mix. Pour the salad into a serving bowl, garnish with pecans, parsley and sumac and serve.
