Coffee Muffins

Dry muffins are my favorite kind to eat! These coffee muffins are moist inside, great as a

healthy snack or dessert if you will. My kids love to eat them for breakfast:)

They are also great with a little jam and peanut butter on top… just an idea😋

They are gluten-free too, which makes it easier to digest.

Simple and delicious!

Ingredients:

1 cup oat milk, or any other alternative milk

1 teaspoon apple cider vinegar 

2/3 cup applesauce or 1 large banana, mashed

1 tablespoon instant coffee 

2/3 cup pure maple syrup

Pinch of salt

1 tablespoon cinnamon

3 cups old fashioned gf oats

1 teaspoon baking powder

1 teaspoon baking soda 

1/4 cup walnuts, chopped 

Directions:

Heat oven to 375 F.

Take a large bowl and add oat milk, apple cider vinegar, applesauce or banana, instant coffee, pure maple syrup, salt and cinnamon. Mix with a whisk until nicely smooth, then add oats, baking powder, baking soda, and walnuts. Mix with a spatula until well incorporated.

Take a muffin pan and line with baking cups. Take a large ice cream scoop and scoop an evenly sized batter into each baking cup.

Bake in the oven for about 15-20 minutes.

Let it cool down before serving.

I keep them in the fridge in a ziplock bag and my kids help themselves. They like to warm it up In the microwave for 10 seconds before eating.
