Pecan Chocolate Roulade
This Pecan Chocolate Roulade is the ultimate healthy sweet treat. It’s perfectly balanced in flavor, moist and satisfying. It is gluten-free which makes it easier to digest and the crunch from the pecans gives it a wonderful texture.
Ingredients
Dough ingredients:
1 1/2 cups almond flour
1/2 cup gf oat flour
1/2 teaspoon baking powder
1/2 cup tahini
1/4 cup pure maple syrup
2 tablespoons water or almond milk
Dough Directions:
Heat oven to 375 F (convection setting).
Mix the dry ingredients using a whisk. To the same bowl add the wet ingredients. Mix with a whisk or a spatula until combine.
Take a parchment paper in the size of your baking sheet and place on the counter. Pour the dough onto the parchment paper. It will be sticky. Take another parchment paper and place on top.
Use a rolling pin to roll the dough between 2 parchment papers.
Try to create a rectangle shape. Let it rest in the fridge for a few minutes and in the meantime prepare the filling.
Filling Ingredients:
3/4 cup chocolate chips
1/4 cup coconut milk or any other milk
2 tablespoons pure maple syrup
3/4 cup chopped pecans
Filling Directions:
Take a glass measuring cup dish and add chocolate chips, milk and pure maple syrup. Pulse in the microwave 15 seconds at a time until the chocolate melt.
It will probably take 30 seconds. After 15 seconds make sure to whisk.
To the melted chocolate mixture add the pecans and mix.
Directions
Pour the filling on the dough and spread evenly using a spatula.
Roll the dough lengthwise and use a knife to score slices. (Don’t slice all the way)
Place the roulade seam side down on the parchment paper on the baking sheet and bake for about 40 minutes or until golden brown.
Let it cool down completely before slicing.
sprinkle some powdered sugar on top and serve.
Store in a jar on the counter for up to 5 days or in the fridge for longer.
