Banana Chocolate Chip (GF, Vegan, Oil-Free) Muffins

These muffins are fantastic and a healthy-ish treat for you and your kids.

Super easy to make in the food processor, and only 20 minutes in the oven.

You can make a double batch and freeze the rest for later. Great as a breakfast option as well.

Ingredients:

1 cup GF flour blend

2 cups GF oat flour

1/3 cup almond flour

2 teaspoons baking powder

1/2 teaspoon baking soda 

2 large bananas 

2/3 cup apple sauce 

1/2 cup pure maple syrup

2 flax eggs (2 tablespoons flaxseed meal mixed with 6 tablespoons of water, let sit for 10 minutes)

1 tablespoon white vinegar 

1 teaspoon vanilla extract

1/4 cup chocolate chips 

Directions:

Heat oven to 375 F

Prepare a muffin tray with baking cups.

Add all the wet ingredients into the food processor. Mix.

Add all the dry ingredients into the food processor and mix until smooth.

Add the chocolate chips and pulse a couple times.

Take an ice-cream scoop and place evenly-sized scoops into the baking cups and bake in the oven for about 20 minutes, until golden brown.

Let it cool down and enjoy!
