Green Buckwheat Wrap
Green buckwheat is such a good naturally gluten-free seed that seriously goes a long way. It is super versatile and is great for breads, wraps, porridge, and patties. The flavor is mild and so is the smell of the green raw seed, unlike the roasted buckwheat that has a pretty strong smell that many people shy away from.
These wraps are soft & delicious. If you don’t eat them right away, make sure to warm them up slightly in the microwave for 10 seconds covered with a damp paper towel to keep them moist, right before serving.
Ingredients:
Yield: 8 wraps
1 cup green buckwheat + 3 cups water, soaked overnight
1 1/4 cups water
1 tablespoon olive oil
1/2 teaspoon shawarma spice mix
1/2 teaspoon cumin
1 teaspoon baking soda
1 teaspoon white vinegar
+salt
+pepper
Directions:
Drain the buckwheat and add to a food processor along with 1 1/4 cups water, olive oil, 1/2 teaspoon shawarma spice mix, cumin, baking soda, white vinegar salt and pepper. Process until completely smooth.
In a nonstick pan on medium heat, pour a thin layer of the batter, like a crepe. You can use the ladle as a measuring tool to ensure that your wraps are all the same size. Cook on medium heat until the sides start to lift off of the pan and there is some bubbling. Flip it over and cook for a minute or so. The wraps should turn out pretty flexible, making them easy to fill with whatever you like.
Fill the wrap with your favorite filling. It is always best to spread something like vegan cheese or avocado and then add your favorite vegetables and protein. Get creative!
