Quinoa Buckwheat Burgers
Burgers or Patties, you decide:) These are just mouth watering! Love this recipe so much!!
Ingredients:
Yield: 8 Burgers
1 cup quinoa
1/2 cup green raw buckwheat
3 cups water
1/3 cup corn
1/3 cup cooked white beans
1 bunch parsley, chopped
1 bunch cilantro, chopped
1 bunch beets greens, cored and chopped
4 spring onions, chopped
1 clove of garlic, minced
2 tablespoons olive oil
salt
pepper
Topping:
olive oil spray
Directions:
Heat oven to 375F.
Take a baking sheet and line with a parchment paper.
Add quinoa, green buckwheat and water to a sauce pan and cook on low, until all the water have evaporated. In the meantime prepare all the rest of the ingredients and pour into a large mixing bowl. Add the cooked quinoa and buckwheat mixture too. Mix well
Next, create an evenly size burgers and lay on the baking sheet. spray the top with olive oil and bake in the oven for about 20 minutes until golden brown.
serve with your favorite side dish, I like to serve it with greens, or roasted vegetables.
