Quinoa Salad Meal

Quinoa is a seed that is a staple ingredient in my kitchen. I use quinoa in so many ways, from savory to sweet, from cold dish to warm dish, from soups to stews and the variations are endless.

It is a very important seed in the plant base diet, especially if you want to stay away from other processed protein alternative that are out there on the shelf.

I always prefer to use ingredients that are closer to their natural shape. That you can see and recognize them after they are cooked.

I decided to name this dish quinoa salad meal, because this is a super balanced meal. if you eat that salad for lunch or dinner, you are eating a balanced meal that contains protein, vegetables, good oil and a meal that is loaded with vitamins and nutritions.

I'm sure that you tried quinoa in a salad before, however, when I develop new recipes, there is always one that stands out, and is better then others. This is one of them! The way I judge a recipe is kids, yes kids. If a kid, preferred not mine, since mine are used to this kind of food, but friends kids, who don't eat quinoa on a regular basis, like it, then I know its a good recipe!!

The other day, I was asked to bring a dish to a dinner I was invited too, and I decided to bring this salad. My friend wrote to me the next day: "Hadar came back from school and all she wanted to eat was your food" I could have not be happier to hear that! It proves to me that everything is possible, and everything is an acquired taste, even if you thought your kids wouldn't eat that, you'll be surprised. My motto is always to keep trying. Trying to expose your kids to as many type of foods, you never know what they'll like.

Quinoa Salad Meal

Ingredients:

Yield: 6-8 servings

3 cups cooked quinoa

3 cups fresh broccoli, chopped

1 cup carrots, chopped

1 yellow pepper, chopped

1 orange pepper, chopped

1 cup cucumber, chopped

3 green onions, chopped

1 clove of garlic, minced

handful of fresh parsley, chopped

Dressing:

2 tablespoons olive oil

1 lemon juice

1 tablespoon coconut nectar

1 tablespoon tamari

salt

pepper

Directions:

Take a mixing bowl and mix all the salad ingredients.

Take a smaller bowl and mix all the dressing ingredients.

Pour the dressing over the salad and mix. Serve cold or at room temperature.
