Coconut Almond Cookies
Every year on Passover I hear people around me say "There is nothing to eat on passover" and I must say that I do not agree. I think that being creative, using good ingredients can absolutely create good, tasty, food on passover week. These cookies are so yummy, not only for passover! They are guilt free which makes it even better. Super easy to make, and you will not feel like you are compromising on anything this holiday.

Ingredients:
Yield: 26 Cookies
2 cups unsweetened coconut fine flakes
2 cups Almond meal
1/2 teaspoon salt
2/3 cup pure maple syrup
1/4 cup coconut oil
3 flax eggs (3 tablespoons flaxseed meal with 9 tablespoons water, mix and let sit for about 10 minutes)
1 teaspoon vanilla extract
Directions:
Heat oven to 375F.
Take a mixing bowl and add coconut flakes, Almond meal and salt. Mix to combine.
To the same bowl add maple syrup, coconut oil, flax eggs and vanilla extract. Mix well.
Take the smallest ice cream scoop and create an evenly sized cookies.

Bake for about 20 minutes, until the edges become golden brown.
Let it cool completely before serving.
