Zucchini & Tofu Patties

Zucchini & Tofu patties are my newest favorite hit. They are so light, yet so satisfying!

The fact that I can add everything to the food processor and make the patties in no time help a lot:) I bake them in the oven and then eat it as my protein on top of a yummy salad. You can't go  wrong, super easy to make. The kind that kids like too, because they are soft, smooth texture and flavored perfectly. Give it a try and see for yourself.

Zucchini & Tofu Patties

Ingredients:

6 zucchinis, sliced 

1 cup leeks, sliced into circles

1 package of silken tofu, 14 oz 396 gr

1/2 cup gluten free oat bran flour

1 tablespoon nutritional yeast

1 tablespoon mustard

1 teaspoon onion powder

1 teaspoon garlic powder

salt

pepper

Topping:

gluten free panko breadcrumbs 

Directions:

heat oven to 375 F.

Take a baking sheet and line with a parchment paper.

In a food processor add zucchini and leeks, process for a minute just to break it down.

Next add tofu, gluten free oat bran flour, nutritional yeast, mustard, onion powder, garlic powder, salt and pepper to taste. Process until smooth.

Take an ice cream scoop and create  an evenly sized patties.

sprinkle with gluten free breadcrumbs and bake in the oven for about 30 minutes.

Let it set for 10 minutes before serving.
