Olive Oil Orange Cake

Ingredients

2 oranges, zest and juice

1 cup unsweetened almond coconut milk or any other alternative milk

1 teaspoon vanilla extract

1/2 cup pure maple syrup

1/3 cup olive oil

2 1/2 cups spelt flour or white flour

1 cup almond flour

1 teaspoon baking soda

 2 teaspoons baking powder

1/2 teaspoon salt

Directions 

Preheat oven to 350°F (175°C).

Spray a round cake pan with olive oil.

In a mixing bowl, whisk together orange zest, juice, almond coconut milk, vanilla extract, maple syrup, and olive oil.

In a separate bowl, combine spelt flour (or all-purpose flour), almond flour, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, whisking until just smooth.

Pour the batter into the prepared pan and bake for about 40-50 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool completely before serving.
