Artichoke Dip

 

This is probably the most likable appetizer ever! It is the kind people can't have enough of...

my daugther came home from college and I prepared it for her and couldn't make her happier:) 

it is a 5 minute preparation time and 20 minutes in the oven, super fast!  

To keep it extra healthy, I like to serve it with vegetables sticks like carrots, cucumber and celery. It goes very well with gluten free rice crackers too. 

I use the "feta cheese" in this recipe and this is the secret ingredient that make that dish so creamy and delicious.

 

Ingredients:

1 jar marinated artichoke hearts, 33 oz / 0.94 g, drained

1 tablespoon dijon mustard

1 tablespoon nutritional yeast

1 cup almond feta cheese

1 tablespoon olive oil

salt

pepper

 

Topping: 

1/4 cup gf bread crumbs

+ olive oil spray

 

Directions: 

Heat oven to 375 F. 

Take a small round Pyrex dish, and spray with olive oil. Set aside.

In a food processor add all the ingredients, mix until combined, but not too smooth, leave some  texture. 

Pour the mixture into the Pyrex dish. Sprinkle with bread crumbs, spray the top with olive oil. 

Bake in the oven for about 20 minutes, until the top is golden brown.  

Serve with veggies and crackers.
