Chocolate Chips Hamantaschen

It's Purim time! A wonderful and happy Jewish holiday when the kids get to dress up in costumes and it is encouraged for adults to drink wine and be happy! It's a big mitzvah to be joyous and to celebrate!

People give each other a basket with goodies called, "Mishloah Manot" and usually one of the items you put in it is Hamentaschen (preferably homemade). I have 3 different versions to make Hamentaschen, but this one is probably the winner. Super easy and delicious! 

 

Ingredients:

1/4 teaspoon xanthan gum

1/4 cup arrowroot flour

1/2 cup almond flour

1/2 cup gluten free oat flour

1/4 cup coconut flour

1/4 cup coconut oil

1/4 cup maple syrup

Filling:

Dairy free and gluten free chocolate chips

 

Directions:

Heat oven to 375° F

Take a baking sheet and line with a parchment paper.

In a food processor add all the dough ingredients, first all the dry ingredients: Xanthan gum, arrowroot, almond flour, coconut flour. Pulse  a couple of times, then add coconut oil and maple syrup. Process for a minute or less, until the dough is formed. 

Dust your working surface and the rolling pin with flour. Roll the dough onto a thin layer, but not too thin.

Take a round cookie cutter or a cup to create round circles. Place a teaspoon of chocolate chips in the center of each cookie. Pinch one side to create an angle. Then pinch the other 2 sides to create a triangle shape. Place on the cookie sheet. Bake for about 10-15 minutes. Let it cool. Sprinkle with powdered sugar and serve.
