Mandarins & Super Greens Power Salad

Start your Sunday with this easy, yummy, super greens salad. Mandarins are in season, take advantage of it! Marinate them overnight with olive oil, lemon, agave, salt and pepper then add to your favorite greens such as baby kale, spinach and arugula, sprinkle some hemp seeds and chopped walnuts, and you are done! enjoy!

 

Ingredients:

3 mandarins, peeled and divided into segments

For the Marinade:

1 tablespoon olive oil

1 lemon, juice and zest

1 1/2 teaspoon pure maple syrup

Salt

Pepper

3-4 cups of greens

1 tablespoon hemp seeds

1/4 cup chopped raw walnuts

 

Directions:

In a mixing bowl add the mandarins and all the marinade ingredients. Mix and let marinade overnight.

Assembling the salad: take a large salad bowl, add the greens, pour the mandarins on top sprinkle hemp seeds and walnuts. Mix and serve.
