Peanut Butter & Jelly Cookies

These cookies are the ultimate example for a guilt free treat. They are loaded with protein, low in sugar, contain good fat, and most importantly are extremely delicious! They'll be gone quick, I can assure you that:) I like to use a raspberry jam on mine, but you can use any kind you'd like on yours.

 

Ingredients

yield 32 cookies

 Dough ingredients:

1 cup almond flour

1 cup peanut butter

1 flax egg, (1 tablespoon flaxseed meal mixed with 3 tablespoon of water)

1/2 pure maple syrup

1 tablespoon coconut oil

Topping

Raspberry Jam,  or your favorite kind

 

Directions

Heat oven to 375° F

Take a baking sheet and line with a parchment paper.

In a food processor, add all the dough ingredients, process until combine. You can also mix all the dough ingredients by hand in a mixing bowl.

Take the smallest ice cream scoop and create bite size balls, and place on a baking sheet. Create a dent with your thumb on each cookie, and fill with jam. (about 1 teaspoon)

Cook for about 10-15 minutes.

Let it cool down and set.

Store it in a glass jar on the counter.
