Baby Kale (Avocado & Mango) Salad With Hemp Seeds & Dry Roasted Almonds

So many variations for a salad.  I always make it a bit different and more interesting for my palette. I use protein (almonds) and good fat (avocado) as well as anti oxidants (kale, cabbage) also super food (hemp seeds) and some sweetness won't hurt..(mango) to complete the balance. I am fortunate to like every bite of it and every ingredient separately. it is such a filling and satisfying salad that you'll want to do it over and over. Eating healthy and balanced does not mean boring. It means nutritious and "real food". Cheers.

 

Ingredients:

3 cups of baby kale

1 cup red cabbage, chopped

1 red bell pepper, cubed

1/2 avocado, cubed

1 mango, peeled and cubed

1 tablespoon hemp seeds

1/4 cup dry roasted slivered almonds

Dressing:

1 teaspoon olive oil

Juice of 1 lemon

1 teaspoon pure maple syrup

Salt

Pepper

 

Directions:

Mix all the salad ingredients.

Mix all the dressing ingredients.

Pour the dressing over the salad, mix and serve.
