Baked Onions, Beets and Potatoes
Go simple! Eat your veggies in the most natural way. These three vegetables always go well baked with a good olive oil.
We all "eat" with our eyes first, so the preparation of how this dish visually looks appealing is important! this is what our bodies need, the vitamins of fresh and un-processed food, while maintaining the flavor of the veggies themselves. When I am invited for a dinner somewhere and I'm asked to bring a dish, I will always choose to bring a dish that I love to eat. This is a good one for myself as well as to share.
Ingredients:
6 small beets, peeled and sliced
2 russet potatoes, washed and sliced
3 small onions, sliced
1 tablespoon olive oil or more
Salt
Pepper
Green onion for garnish
Directions:
Heat oven to 350 F
Take a round pie dish, grease with some olive oil.
Start layering the vegetables in order. Start with the onions on the outside layer, and then the beets, and lastly with the potatoes in the center. Drizzle with olive oil, salt and pepper. Cover with aluminum foil and bake for about 40 minutes. Then remove the aluminum foil and broil for 10 more minutes. Drizzle with some more olive oil, garnish with green onion and serve.
