Kale Salad, Strawberries & Walnuts

Curly Kale is probably my favorite green leaf. Once you get into the taste of it, you'll be addicted. It is earthy and thick, so you need to chop it up quite thin and then it's easier to bite into.

It comes from the cabbage family, just like the cauliflower, broccoli and collards.

I find that to achieve the best flavor out of kale, you need to incorporate some acidity (lemon) and sweetness (pure maple syrup).

I often like to add a fruit to my kale salad, such as strawberry, apple, pear or even orange slices. But, always add nuts for a crunch and for extra nutrition. I personally prefer walnuts, but you can add almonds, sunflower seeds, or even candied pecans. This specific salad contains only 3 ingredients, but the flavor goes a long way. One cup of kale contains only 33 calories, packed with vitamins C, A and K. It is very high in beta carotene and rich in calcium.

Ingredients:

4 cups curly kale, chopped

1/2 cup Strawberries, thinly sliced

1/4 cup raw walnuts, chopped

Dressing:

1 tablespoon extra virgin olive oil

1 lemon, juice & zest

1 tablespoon pure maple syrup

+Salt

+Pepper

 

Directions:

Mix all the salad ingredients.

Mix all the dressing ingredients.

Pour the dressing over the salad, mix and serve.
