Date, Chocolate & Nuts Roll

This sweet snack is one of my childhood favorites! My mom used to make it all the time. Dates and chocolate are such a good combination. The nuts add the perfect salty crunch that balances the sweetness of the date/chocolate mixture. It is the best guilt free snack of all times!

 Ingredients

1 package of baking pitted dates 13 oz/375g

1 package of semi sweet chocolate 5oz

1 teaspoon vanilla extract

1 tablespoon coconut oil

1 tablespoon pure maple syrup

2 tablespoons almond milk

1/3 cup roasted walnuts

1/3 cup roasted pistachios

1/3 cup roasted hazelnuts

1/3 cup unsweetened coconut flakes

Topping:

1/3 cup raw sesame seeds

 

Directions:

In a saucepan add all the ingredients except the nuts.

Stir constantly on low heat until combined and smooth.

Add the nuts and stir.

Take an aluminum foil and cut about 3 sheets of a paired dish size. Sprinkle sesame seeds on the foil. Then divide the date/chocolate mixture into 3 pieces. Place each one on the foil and roll into a 1" diameter approximately. Make sure it's all covered with the sesame, and press tightly. Freeze the rolls for a few hours- preferred overnight, or until completely hardened. Then thinly slice bite size pieces. Store in an air tight container in the freezer, and serve when desire.
