Vegan & GF Flaxseed Sandwich Cookies
Recently, I was looking for a way to use flaxseed meal in my baking. I experimented with several different desserts, but the most successful one were these soft flaxseed cookies that melt in your mouth. I love raspberry jam, and it goes so well with the cookies. Another plus is that these cookies are gluten free! They are much easier to digest, and the ingredients are very healthy.

So all you need to do is try and see for yourself!
Ingredients:
1 cup flaxseed meal
1/2 cup almond flour
1/2 cup coconut flour
1 teaspoon ground cinnamon
1/3 cup maple syrup
3/4 cup apple sauce
Filling:
raspberry jam or any other jam that you like.
Powdered sugar to sprinkle on top.
Directions:
Heat oven to 375 F
In a food processor add all the ingredients and pulse until completely incorporated into a dough.
Create bite size cookies and press with a fork on the top to create a small indentation.
Take a baking sheet, line with parchment paper and lay the cookies down. Bake for about 15-20 minutes until the edges become golden brown.
Let it cool down completely. The cookies are going to be soft rather than crunchy.
Take one cookie and about one tablespoon jam and spread it on the inside part of the cookie, leaving the pattern outside. Then, take the other cookie and press the two gently together. Repeat this process for the rest of the cookies. Sprinkle with powdered sugar and serve.
