Vegan Brownies
Bite size vegan brownies are the perfect end to any meal or a great addition to a yummy coffee. You can satisfy your sweet tooth with a small chocolatey brownie--it doesn't get any better than that! These brownies are very decadent, and taste best at room temperature. Great as a snack for your kid's lunch, or as a pick-me-up for a long day.
Ingredients:
1/2 cup coconut oil- melted
2 flax eggs-(2 tablespoon flaxseed meal and 6 tablespoon water)
3/4 cup Coconut palm sugar or pure maple syrup
1 teaspoon baking powder
Pinch of salt
1/2 cup cocoa powder
3/4 cup spelt flour (or gf flour blend for gf version)
For serving:
Powdered sugar
Directions:
Heat oven to 375 F.
In a mixing bowl add coconut oil, pure maple syrup and flax eggs--mix well. In another mixing bowl, add baking powder, salt, cocoa powder and flour--mix.
Add the dry ingredients into the wet ingredients slowly and mix constantly, until it reaches a smooth texture.
Take bite size baking cups and shape balls of the dough with your wet hands into the cups. Bake for 10 minutes. Let it cool, sprinkle with powdered sugar and serve.
