Sticky & Cheesy Brown Rice Cakes

A great way to get your daily dose of whole grains is by eating brown rice. This brown rice knows as "sweet brown rice" is basically a sticky rice made out of brown rice. So, that means no empty calories, just whole grains that taste similar to sushi white rice.

I was happy to find it in the store and was very excited to try it! My kids loved it, and didn't leave a piece for dad... They were all over it, and I understand why. The flavor is mild, the texture is soft and chewy, and the bread crumbs create the perfect crunch. I served them as a side dish for my spicy soy curls. The kids dipped the cakes in the sauce and enjoyed every bite! I assure you that even the picky eaters around will adore that dish. Give it a try, and let me know what you think.

 

Ingredients:

1 cup dry sweet brown rice cooked with 2 cups water

3 green onions chopped

3 tablespoons nutritional yeast

2 tablespoons roasted sesame seeds

Salt

Pepper

1 cup panko breadcrumbs 

Olive oil spray 

 

Directions:

Heat oven to 375 F

Prepare a baking sheet and line with parchment paper. Spray with olive oil. set aside.

In a mixing bowl, add the cooked brown rice, green onions, nutritional yeast, sesame seeds, salt, and pepper. Mix well.

Take an ice cream scoop, dip in lukewarm water and into the batter to create an evenly sized cakes.

Then into the breadcrumbs bowl to coat the cakes, and place in the greased baking sheet.

Bake for about 20 minutes, then turn the oven onto broil for few more minutes until golden brown.
