Creamy Cashew Spread

I was never a fan of eating meat, but I was definitely a cheese lover, so I'm trying to find alternatives that are good for me, for my body and for my health. This creamy cashew spread is a great alternative to a picante type cheese. The onions make it unique and creamy. I let my daughter try some, (my harshest critic), and she loved it! The flavors blend perfectly with tomatoes and nigella seeds! It makes me excited to come up with better alternatives.

It's a good recipe that's good for you. If it's packed with natural vitamins, it equates to a healthy meal!

 

Ingredients:

1 cup soaked (at least 3 hours) raw cashews

1/2 teaspoon salt

1 teaspoon pure maple syrup

2 tablespoons chopped onion

2 tablespoons lemon juice

1/3 cup water

For serving:

Nigella seeds

Diced tomatoes

 

Directions:

Add all the ingredients into the food processor and blend it for few minutes, scraping the sides from time to time.

You want to reach a really creamy texture. Once it is done, you can spread it on bread, sprinkle nigella seeds and put diced tomatoes on it and serve.
