Baked Brown Rice With Mushrooms
Baked rice is a dish I grew up with. My mom used to make it often and it was a hit every single time. My mom wasn't big on rice--she was more of a potato lover--but this is one of her go-to rice dish that we all loved so much, so I had to share it with you! The onions and mushrooms add a lot to this dish. Good flavors, with lots of fiber from the brown rice. A great healthy side dish that's easy to make especially when you have a crowd to feed :)
Ingredients:
4 cups fresh mushrooms, chopped
1 onion, chopped (or 2 leeks, chopped)
1 clove of garlic, minced
1 1/4 cups brown rice, rinsed
2 tablespoons olive oil divided
2 1/2 cups water
3 tablespoons gluten free soy sauce
salt
pepper
Directions:
Heat oven to 350 F.
In a nonstick pan, add 1 tablespoon olive oil, onions, salt and pepper. Sauté for a few minutes, then add the garlic and mushrooms. Keep mixing until golden brown.
Take a Pyrex dish and add the mushrooms mixture, rice, soy sauce, water, pepper, and 1 tablespoon olive oil. Cover with aluminum foil and bake for about 1 hour until all the water has soaked into the rice. Serve warm.
